I love making treats that are super fast, take only a few ingredients and taste amazing! These take less than 10 minutes from start to finish so I can easily make up a batch and get back to work or relaxing.

Plus they only take a few kitchen essentials so there isn't a ton of dishes to do.

Coconut Macaroons

Ingredients

  • coconut flakes
  • sweetened condensed milk

Equipment needed

  • Baking Sheets - We are huge fans of these baking sheets that have sides. You don't have to worry; you are going to remove the cookies from the oven and have the slide right off.
  • Large Mixing Bowl - We are big fans of this glass batter bowl that has a handle. It makes it easy to mix ingredients and keep the mixing bowl steady on the counter.
  • Ice Cream Scoop
  • Heat resistant potholders- A couple of years ago we had a fire scare when we didn't realize we had turned a burner on and a cloth potholder caught fire. Thankfully we walked by the kitchen and saw the smoke and were able to get it out ourselves. Since then we have only used these heat-resistant potholders.

When mixing you want to make sure that there is plenty of the coconut mixed with the condensed milk. The condensed milk should bind the coconut together but it should not be liquidy.

If the mix has too much-condensed milk the milk will spread across the baking sheet and not keep the coconut bound together.

If you want to make these even more decadent you can drizzle chocolate over them or dip the coconut macaroons in chocolate.

Hi, I really like short and sweet recipes. 😉 One question: Do you use sweetened or unsweetened coconut? Thanks!

I used sweetened coconut. I figured it would help make the cookies even better.

These cookies are great, EXCEPT the recipe I use also has 2 Tbsp corn starch added to the dry coconut before adding the sw cond milk.
The most common coconut is sweetened, although I have bought the unsweetened kinc ONCE.
Also you can add extra things like chopped marachino cherries, choc chips or m&m s. I really like the dark choc chips in these. I also bake them on parchment paper,

I love this recipe! Just want to know the weight of the coconut package? We have fresh coconuts in my country and I'm wondering how it would work out with them!

FAQs

What are the 2 types of macaroons? ›

One of the main differences between French and Italian macarons is the method of preparation. French macarons are made by mixing the almond flour and powdered sugar with whipped egg whites, while Italian macarons are made by heating the sugar and egg whites together before adding in the almond flour.

What are coconut macaroons made of? ›

Mix coconut, sugar, flour and salt in a large bowl. Stir in egg whites (not whipped) and almond extract until well blended. Drop by tablespoonful onto greased and floured cookie sheets. Bake 325F for 20 minutes or until edges of cookies are golden brown.

Can I use coconut flour instead of almond flour in macarons? ›

- Don't try to substitute almond flour with coconut flour in a macaron recipe. Coconut flour is extremely absorbent, so if you simply swap the ingredients, you will end up with cement! - Wait until the macarons form a skin before baking them.

What makes macaroons hard? ›

French macaroons are incredibly sensitive to moisture above everything. This is why some recipes call for "ageing egg whites" as when egg whites get old they loose some moisture. Some recipes also recommend powdered food colouring over liquid, again to control the water content in the batter.

What's the difference between French macarons and coconut macaroons? ›

Macarons and macaroons are different in their appearance, taste, and texture. A macaron is a meringue-based sandwich cookie that is tinted with food coloring. A macaroon is a drop cookie made with shredded coconut.

Which macaron method is best? ›

There are a few methods for making macarons including Italian, French, and Swiss. Swiss isn't as common (I've never made them that way), but Italian macarons are pretty popular. The process is a little more involved than the French method, but the results are considered more reliable.

What is a good macaroon? ›

The cookie's texture beneath the crust should be light, just a little chewy, and soft, but not so soft that it's mushy. It's okay if the cookie looks "uncooked." As much as I love sugar, sweetness shouldn't take over in a macaron. They come in a wide variety of flavors for a reason—so you can taste the flavor.

Why are macaroons so expensive? ›

Macarons are typically more expensive than other baked goods due to their labor-intensive preparation, high-quality ingredients, and delicate nature. How long do macarons last? Macarons typically last for 2-3 days at room temperature, or up to a week in the refrigerator.

Why are my coconut macaroons sticky? ›

Fresh shredded coconut will have too much liquid in it and this is likely to be seeping out when you cook the macaroons, making them sticky. Also as you live in Singapore it could be that the humidity of the air is contributing to the moistness of the macaroons.

Are coconut macaroons unhealthy? ›

That said, because macaroons are high in sugar and offer little nutrition, eating too many of them regularly could be problematic, especially if they replace more nutritious foods in your diet.

How do you keep coconut macaroons fresh? ›

The macaroons can also be made a day ahead and stored in an airtight container. Leftovers should keep in an airtight container for a further 2 to 3 days (do not re-freeze thawed macaroons). Please note that the macaroons should be made with American-style sweetened, shredded coconut and not dry desiccated coconut.

Which is better for baking almond or coconut flour? ›

Coconut flour has a slightly sweet and nutty flavor, with a hint of coconut aroma. It has a more absorbent texture and tends to create denser, moister baked goods compared to almond flour. Due to its absorbency, coconut flour often requires more liquid in recipes to prevent dryness.

Which tastes better, almond flour or coconut flour? ›

The two flours also have slightly different tastes. Coconut has a more generic, slightly sweet flavor, while almond flour (unsurprisingly) has a distinct almond taste. These characteristic flavors can sometimes be great — they can be delicious in cookies, pancakes, mug cakes, and keto bread recipes.

Which is healthier, coconut flour or almond flour? ›

In 2 tablespoons of almond flour, you'll get 80 calories, only 2 grams of carbs, 3 grams of protein, and 1 gram of dietary fiber. While coconut flour is a better source of dietary fiber, iron, and potassium, almond flour does contain iron (2% Daily Value) and calcium (2% Daily Value).

Why are coconut macaroons different? ›

Coconut macaroons: Think of the coconut macaroon as a cousin to the above macaroons. These tasty goodies are made with shredded coconut, sweetened condensed milk, eggs, vanilla, and salt. More importantly, they look different from the above two – they often look a little more round and a little lumpier.

Is desiccated coconut the same as macaroon coconut? ›

There are two different styles of coconut macaroons—those made with unsweetened, desiccated coconut (which is the kind that has been fully dried and contains no additives) and those made with moist, sweetened, shredded ribbons of coconut.

Are coconut macaroons good for you? ›

There isn't any research to support the benefits, but eating a couple of macaroons per day as a test is unlikely to be harmful, either. It's important to note that because there isn't evidence to support eating these cookies, there is also no known amount that may or may not be helpful.
