My daughter, Lainey, is a snacker, especially when she gets home from school. Honestly, I don’t think she ever touches her lunch. That’s why I try have healthy homemade snacks on handand I use thisChewy Peanut Butter Granola Bar Recipe to make her tasty treats with nutrition baked in.

What I love about these granola bars is how easy they are to make, and how chewy, nutty, and chocolate-y they are without being too sweet. Plus, they are filled with lots of good stuff: plain peanut butter, walnuts, flax seeds (yes, I sneak these in), oats, a little bit of honey, and dark chocolate. The only problem is that my husband and I like them even more than my daughter does, and we can polish them off before she gets home from school!

CHEWY PEANUT BUTTER GRANOLA BAR RECIPE

Ingredients:

  • 2/3 cup rolled oats
  • 1/2 cup peanut butter
  • 1/2 cup crushed walnuts
  • 2 tablespoons honey
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 egg white
  • 3 tablespoons canola oil
  • 1/2 cup chocolate chips
  • 2 tablespoons flax seeds (optional)

Directions:

Preheat oven to 325 degrees. Combine the oats, walnuts, cinnamon in a mixing bowl. You can give these bars your own twist by adding some extra nuts or seeds. I like to add a couple tablespoon of ground flax seeds. Sunflower seeds or sliced almonds are also nice additions!

Add 3 tablespoons of canola (or other vegetable oil) to a saucepan over low heat. Whisk in the honey, and peanut butter. Stir until the the peanut butter is nice and smooth. Taste the mixture, it should be a little salty, and moderately sweet. Peanut butter can vary quite a bit in how sweet and salty it is. We use a sweetened salted peanut butter. If you are using a natural peanut butter, you can add another 1/4 teaspoon of salt and 2 tablespoons of honey.

Pour the melted peanut butter into the mixing bowl with the oats and stir until combined. Now stir in the egg white.

Spread evenly in a eight inch pan pan that is lined with parchment paper.

Bake for about 25 minutes, just until the edges start to brown. Let it cool for about 10 minutes, then lift it out by pulling the exposed edges of the parchment paper. Cut into bars with a pizza cutter.

Melt the chocolate in a bowl in the microwave, then drizzle over the the top of the bars.

I swear this batch was gone in a day. 🙂
