If you miss your everything bagels on a keto diet, you will have to try these keto air fryer bagels that you make with yeast. They are chewy, airy and simply delicious! And making them in the air fryer is a breeze. But I also will show you how to bake these low carb bagels in the oven. Each has only 110 calories and 2.7g net carbs.

So today’s post is about everything spice keto air fryer bagels using yeast. Though I will also show you how to make them in the oven if you don’t have an air fryer.

I recently stumbled upon a very popular keto bread recipe on Youtube by a woman named Diedre and I adapted it to make everything bagels in the air fryer.

Ingredients I used and where to get them.

There are quite a few ingredients in this bagel recipe and some you might have to get online. But if you miss bagels on a keto diet you will find it worth the while.

  • Saf instant yeast – this is the brand she uses and if you are a good baker you might be able to use any brand of instant yeast.
  • ground flax seed – I used golden ground flaxseed.
  • oat fiber – This is one of the unusual ingredient that I don’t think you will find in stores but it’s readily available on Amazon. Note this is oat fiber not oat bran.
  • vital wheat gluten – This is another unusual ingredient but I was able to find it at a bigger grocery store. Ask for Bob’s Red Mill brand as that is fairly popular. Again you can buy it online.
  • Swerve confectioners sweetener – You can use a different sweetener if it measures 1 for 1 with sugar. However this is what I use for most of my keto recipes.
  • xanthan gum – You can sometimes find this the gluten free baking area of your grocery store. You can use it in many keto recipes to thicken sauces and it keto baking so it’s worth buying.
  • eggs, baking powder, honey, salt, water and butter – Things we all have.

How to make keto air fryer bagels.

Don’t let the ingredients intimidate you because I am not a very good baker and while my first loaf was not perfect it looked fine when done and tasted great.

  1. First using warm water (110-115°F) add to the bowl of your mixer along with the instant yeast. Mix and hopefully it will fizz for you. I had a bit of trouble with this but it still worked out fine.
  2. Next add the honey and then the eggs and sweetener. Mix well.
  3. In a separate bowl add the rest of dry ingredients and mix them. Slowly add them to the mixer, mixing as you go on a low setting. Then add in the soften butter.
  4. Knead the mixture in the standing mixer for about 5-7 minutes until it all comes together and looks like the picture below in the top left.
  5. Place in a sprayed baking dish and place a piece of plastic wrap on top. Make sure to spray the plastic wrap too. Let it sit in a warm place like the microwave for 1 hour until it rises.
  6. Now take out the dough and use a knife to divide it into 12 equal pieces. Take 1 piece and try to roll it out and form a circle like a bagel. I had trouble getting the ends to stick because I was in a hurry but do the best you can.
  7. Place them in a sprayed air fryer basket. Brush some beaten egg on top then sprinkle everything bagel spice if using.
  8. Bake in the air fryer at 350°F for 10 minutes. That’s it!

How to make these keto bagels in the oven.

You would make this recipe the same as the air fryer version except instead of placing them in the air fryer, you will place them in a sprayed donut pan like the one below. Brush the beaten egg on top and then sprinkle the seasonings if using.

Bake in the oven at 375°F for 20 minutes. As you can see below I still had some trouble getting the ends to stick and boy oh boy did they rise!

Recipe Frequently Asked Questions

Are these keto bagels gluten free?

No they are not because you are using the vital wheat gluten (see below for what this is). They are low carb because you are not using any starches.

How are these bagels low carb?

If you look at the ingredients separately you will see that the vital wheat gluten has most of the carbs (20g) however if you use regular wheat flour it would be 110g. The oat fiber and flax have 0g net carb and the honey is such a small amount and needed to for the yeast to work it’s magic. The whole batch has roughly 28g net carbs and we are making 12 bagels from it so yes they are low carb.

What is vital wheat gluten? oat fiber? xanthan gum?

Vital wheat gluten is a flour that is all gluten and very little starch. It’s made from wheat flour and give bread the elasticity and rise (learn more).
Oat fiber is the made from the shell of the oat that is ground down to a powder. It is an insoluble fiber and used in low carb baking. It absorbs liquid so it can keep baked goods moist. (learn more)
Xanthan gum is a food additive that is used in many low carb recipes as a thickener or stabilizer. (learn more)

Do I have to use all of the dough right away?

No you can place the dough in the refrigerator and use it later in the day, just bring it to room temperature. It might even keep for a few days. I have yet to freeze the dough but that might even work too. I’ll come back and update this post when I do it.

Can I toast these bagels? Freeze them?

Yes they toast beautifully in the toaster just like regular bagels. You can also freeze them just like regular bagels.

Can I make this into a loaf of bread?

You can keep the dough and make it into a loaf of bread. Just place it into a greased bread pan when you let it rise and bake in a 375°F oven for 20-25 minutes. You can also use this as you would store bought pizza dough (and make pizzas!).

Everything Spice Keto Air Fryer Bagels Recipe

If you miss your everything bagel on a keto diet you have to try this keto air fryer bagels recipe that uses yeast to make airy, chewy low carb bagels!

Ingredients

  • 1 cup warm water (about 110°F to 115°F)
  • 1 tablespoon instant yeast (I like SAF)
  • 1 teaspoon honey
  • 2 eggs (plus ½ beaten for brushing on top)
  • ¼ cup Swerve confectioners sweetener
  • ⅔ cup ground flax seed (I used golden)
  • ½ cup oat fiber (not oat bran)
  • 1 ¼ cup vital wheat gluten
  • ½ teaspoon xanthan gum
  • 1 teaspoon baking powder
  • 2 tablespoons butter, softened
  • 1 teaspoon salt
  • Everything bagel spice (optional and to taste)

    While honey works, part of the flavor & slight sweetness of a genuine bagel comes from malt syrup. And, because you are making a yeast “sponge”, the honey or syrup should be mixed with the yeast & water, to give it a good start.

    As other reader Melissa noted, the dough should be left to rise a second time after forming it into bagels. And, though your method to form the bagels is the traditional way (join ends of a dough “snake”), non-pros will probably find it easier to make balls and flatten them….let sit covered with a moist towel for 15 min for the gluten to relax, if dough is very stiff…then punch both thumbs thru each disk and stretch to bagel shape. Let rise that second time before proceeding.

    You do not boil the bagels before baking, and I think that is a critical step. It’s what creates the true bagel crust, chewy and shiny & a pre-bake stickiness to grab the topping. An egg wash give a shine and grabs a topping…but doesn’t give the right texture. Boiling is done carefully, so as not to collapse the rise…boil a minute or less per side. A slotted scoop/strainer is are great for adding, flipping, removing when boiling. .

    I can’t imagine that the gum (which is used to replace gluten), what with all that gluten in the recipe. If it is essential, since some people avoid xanthin gum, try guar, locust bean or agar instead.

    Thank you so so much for this recipe. I didn’t want a recipe that used cheese or almond flour or just any type of fathead dough. I’m so sick of those. This recipe was PERFECT. I made my bagels using a silicon donut mold ( so much easier to remove the bagels/donuts than using the metal pan) I purchased the largest one they sold on AMAZON and they came out BEAUTIFUL! I used a mixer to mix the ingredients together and then I put the dough in the bread machine and pressed the dough setting and let the bread machine do its thing. When I took it out, I removed one monster size dough ball and proceeded to cut and shape them into bagels and placed them in the silicone donut mold. Man did those babies rise. I was pleasantly surprised when I tried one. It was very very good. I use Deidres Lo Carb bread recipe and can see how these bagels taste just like her Lo Carb bread. Thank you so much for posting this recipe. You don’t know how much I appreciate it.

    Hi! Thank you for sharing this recipe. I made it today and am waiting for it to rise! I wanted to share n your written instructions you don’t mention adding the butter. I have baked for years so I realized it is added to the dough but you may want to mention it in your instructions. The other adjustment I made is I formed the bagels and then let them rise once.
