This low carb pigs in a blanket recipe is made with Fathead dough and pre-cooked sausages. It’s a quick and easy appetizer recipe that the kids and family will love. In addition to being low carb, these tasty appetizers are also gluten free.

Pigs in a blanket are a versatile and easy recipe for parties, game night, picnics, packed lunch or a snack for a Friday night in watching a movie. Delicious warm but equally irresistible cold, I have baked a few batches of these low carb pigs in a blanket, under the guise of research and thoroughly enjoyed them. One day, it was all we ate as they are very filling.

I will admit that I have not adhered to the traditional USA recipe of pigs in a blanket where hot dog sausages are used. I look upon hot dog sausages with a raised eyebrow. However, Divalicious Recipes is a judgement free zone and by all means use hot dog sausages for this recipe but please use the best uncured you can buy. I think you can purchase 100% beef hot dogs from Costco but as I’m in St Lucia I’m not an expert in what you can purchase in Costco.

For us Brits, we call a sausage wrapped in pastry a sausage roll. Although the filling is raw sausage meat and the pastry is traditionally a flakey, rich puff pastry. It’s still a sausage wrapped in a pastry. Sausage rolls will be found at most gatherings, parties and buffets! Sold in most takeaway shops and supermarkets It’s almost a British institution!

Did you know that pigs in a blanket are also known as wiener winks, klobasniki, devils on horseback, kilted sausages? I will add sausage roll too!

HOW TO MAKE LOW CARB PIGS IN A BLANKET

I have used a variety of sausages such as chicken, turkey and vegetarian sausage for this recipe and all turned out delicious. Although the recipe card says beef sausages you can use any sausage. Just ensure it is 100% meat and low carb.

Sausages were cooked until golden, then wrapped in Fathead dough, cut in half, brushed with an egg wash then baked. Quick and simple they can be made ahead and stored in the fridge until you are ready to bake them.

For the Fathead dough pastry, I added garlic powder for extra flavour, but this is can be omitted. Onion powder would be a nice touch too.

The difference in nutrition between a regular pigs in a blanket should make you reach for another low carb one!

Ingredients

Dough

  • 1 ½ cups Mozzarella Cheese grated
  • 1 oz cream cheese
  • 1 medium egg beaten
  • ½ teaspoon garlic powder (optional)
  • ½ cup almond flour
  • ½ teaspoon baking powder

Filling

  • 454 grams beef sausages pack of 8
  • 1 medium egg, beaten for the wash

Instructions

Make the Dough

  • Place the mozzarella and cream cheese in a bowl. Cook in the microwave for 60 seconds. Stir and zap for another 30 seconds. If the mixture has not melted give it another blast in the microwave.

  • Stir well, and add the egg, almond flour, baking powder and garlic powder.

  • Mix until you have a dough mixture. Don’t be shy about using your hands to mix the dough. If it feels too sticky, add more almond flour. Ensure that the dough is even in colour and there are no streaks of white.

  • Place in the fridge for 30 minutes to chill the mixture. This helps it to firm before rolling it out.

Make the Filling

  • Grill the sausages, turning over until they are an even colour for about 6-10 minutes. You could also fry them in a pan

Assemble

  • Roll out the Fathead dough in between two layers of parchment paper. Try to keep the shape an even square.

  • With a sharp knife cut out a large rectangle that would cover one of the sausages. Place the sausage on the cut dough and roll until the sausage is evenly covered. Cut in half and place on a parchment lined baking tray.

  • Repeat for all the sausages.

  • Brush the savoury rolls with the egg wash

  • Bake for 20 minutes at 190C/370F degrees until the dough is golden and firm.

Notes

Coconut flour can be used in place of almond flour. Use 2 teaspoons.

Other sausages can be used, chicken, pork, hot dog but the nutritional information may vary.

The net carbs will be the total carb count minus the fibre count. Carb count excludes sugar alcohols.
