masala mirchi bajji recipe | masala mirapakaya bajji | onion masala bajji with step by step photo and video recipe. mirchi bajji or chilli bajji is a common snack or street food across india. it is generally made with long green chillies, but can also be made with other types of chillies. one of the popular bajji variety from andhra cuisine is masala mirapakaya bajji, stuffed with masala onions and sev.
i have posted different variety with chilli bajji. basically my attempt is to cover all the variations across india. i have posted potato stuffed mirchi bajji and also the mirchi bada from rajasthan. i was getting requests to cover the andhra version too which is popularly known as masala mirapakaya bajji. basically, it follows the same procedure of a traditional besan batter based bajji, but has a spiced onion masala stuffing. in addition, i have added sev noodles topping to make it even tastier and lip-smacking. you may use any type of mixture or sev with it, but it is completely optional and you may even skip it as the traditional one is just with onion stuffing.
furthermore, some more additional tips, suggestions and variations to masala mirchi bajji recipe. firstly, the chillies used for this recipe is very critical for this recipe. ensure to use longer and straight shaped chillies. this would help us eventually while slitting and more importantly during stuffing. secondly, if you observe closely with my video, the besan covering is partially covered or almost covered. in other words, do not fully cover the besan coating around the chilli, so that the chilli get in contact with hot oil and helps to cook. lastly, i have added baking soda to the besan batter just before deep-frying the chilli. do not add and rest the batter, otherwise, the strength of baking soda is reduced.

Ingredients
for mirapakaya bajji:
- 6 chilli
- 2 cup besan / gram flour
- ¼ cup rice flour
- ¼ tsp turmeric
- ½ tsp chilli powder
- ¼ tsp ajwain / carom seeds
- ½ tsp salt
- ½ cup water
- ¾ cup water
- ¼ tsp baking soda
- oil, for frying
for onion masala:
- 1 onion, finely chopped
- 2 tbsp coriander, finely chopped
- ½ tsp chilli powder
- ½ tsp chaat masala
- ½ tsp cumin powder
- ¼ tsp salt
- 1 tsp lemon juice
- 2 tbsp sev
Instructions
mirapakaya bajji prepaparion:
firstly, wipe the chilli clean and slit in centre.
remove seeds to create some space to fill onion masala at the end.
now in a large bowl take 2 cup besan,¼ cup rice flour.
add¼ tsp turmeric, ½ tsp chilli powder, ¼ tsp ajwain and ½ tsp salt. mix well.
now add½ cup water and mix well.
add water as required and prepare a smooth thick batter.
further add ¼ tsp baking soda and mix well.
now dip the chilli in besan batter and drop in hot oil.
deep fry on medium flame stirring occainnally.
fry until the bajji turns golden brown and crisp.
drain off over the kitchen paper to remove excess oil from mirapakaya bajji.
onion masala preparation:
in a small bowl take1 onion,2 tbsp coriander,½ tsp chilli powder, ½ tsp chaat masala, ½ tsp cumin powder, ¼ tsp salt and 1 tsp lemon juice.
mix well making sure everyhting is well combined.
now open the mirchi bajji and stuff the onion masala.
finally, garnish with 2 tbsp sev and enjoy masala mirchi bajji with chai.

- additionally, prepare a thick besan batter to get nice fluffy bajji.
- finally, masala mirchi bajji recipe tastes great when prepared slightly spicy.
