If you are on Whole30 or if you follow gluten-free and paleo diets you should use coconut amino to make this recipe since soy sauce contains gluten and it’s not allowed on Whole30. I highly recommend this one from Coconut Secret because it’s gluten-free, organic and has 70% less sodium than soy sauce. It’s also vegan and Non-GMO.They’re affordable, delicious and last a lot. How Do You Make Cauliflower Rice Not Soggy?

To keep this riced cauliflower recipe from being soggy, simply cook it less. The longer the cauliflower is cooked on the skillet, the softer it becomes. If you’re worried about the cauliflower being too soggy, you can always cook it up in advance, set it aside, and then add it to the recipe at the end.

Also, don’t cover the pan when you’re cooking the rice to avoid steam it. When you steam the cauliflower, it makes the cauliflower mushy and it can even watery. Stir frying over medium-high heat is best.

Is It Cheaper to Make Your Own Cauliflower Rice?

It is! While it’s super convenient to purchase pre-made frozen cauliflower, ricing it yourself at home isn’t too difficult and costs a fraction of store-bought.

All you have to do is wash and thoroughly dry your head of cauliflower, cut the cauliflower into florets (you can also chop it if you prefer) and then add them to the food processor and pulse it until it’s of rice consistency. You might need to do this in batches, depending the size of your food processor.

If you don’t have a food processor, not to worry, you can grate the cauliflower head through a cheese grater (as know as a box grater) or use a knife and finely cut up the cauliflower. It should be the size of traditional rice grains.

When your cauliflower is totally chopped, you can press any excess moisture from the rice by placing the cauliflower rice on a large paper towel or cheese cloth and squeeze any water or excess moisture from it. It’s an extra step, but if you have time please do it.

How Does Cauliflower Rice Taste?

Cauliflower rice doesn’t have a strong taste to it. It is comparable to cabbage but cauliflower will take on the taste of whatever you season it with. That’s why it’s so great to cook with cauliflower. You can add lots of fresh herbs and spices to add more flavour to your dishand it can also be a base for stir fries and any other dish you would make with regular rice.

Meal Prep Tips

  • Make sure to store all your portions into an airtight container. I use glass containers has they don’t hold onto any smells and are easier to clean.
  • Be sure to keep the meals refrigerated until you’re ready to eat.
  • This meal prep will last for up to 4 days when properly stored.
  • I do not recommend you try and freeze this recipe. The texture of the mushrooms especially will not be ideal when thawed. However, since this skillet recipe only takes 20 minutes to make, you can easily and quickly whip this up whenever you’d like!

FAQs

How do you keep cauliflower rice from getting mushy? ›

Easy DIY Raw Cauliflower Rice Recipe (That's Not Mushy!)

In a food processor, add the cauliflower florets and pulse for 30-60 seconds. Add 2-3 cups at a time and remove as it is riced. This will prevent the cauliflower from being over-processed. With a towel, pat dry or squeeze the liquid out from the cauliflower.

Is it cheaper to make cauliflower rice or buy it? ›

Cheaper: Making riced cauliflower from scratch will save you money in the grocery store. A head of cauliflower is cheaper than buying fresh or frozen riced cauliflower. Tastes Great: Because it's made fresh, it also tastes better. You can use it in any recipe that calls for rice.

How do you get moisture out of cauliflower rice? ›

If using a food processor, cut into small pieces and use the grater attachment to grate the cauliflower into “rice.” Optional: Transfer to a clean towel or paper towel and press to remove any excess moisture, which can make your dish soggy. Once you have your cauliflower rice, it's easy to cook (or enjoy raw)!

How do you make rice not sticky and mushy? ›

Rinse the Rice: Rinse the rice under cold water until the water runs clear to remove excess starch. This helps prevent the rice from becoming sticky as it cooks. 2. Use the Right Ratio of Water to Rice: Use the appropriate water-to-rice ratio for the type of rice you are cooking.

What happens when you eat too much cauliflower? ›

While everyone's tolerance is different, too much cauliflower can create G.I. distress, like excess gas and bloating. “Make sure to drink enough water to move it through your system,” suggests Lincoln. Cooking it can also dial back digestion woes.

What brings out the Flavour of cauliflower? ›

This is true of any vegetable — boiling it will give you a flavor closer to the raw flavor, which means more bitterness and more astringency. Caramelizing it will bring out its hidden sweetness. This light, vibrant roasted cauliflower salad is a recipe I developed for the fall menu at Duo.

Why do you soak cauliflower before cooking? ›

If you're planning to roast the cauliflower whole or slice it into steaks, slice off the thick stem at the base. Drop the whole cauliflower head upside-down into cool, salted water. Let it soak for 10 to 15 minutes to remove dirt, residue and bugs.

Why does my cauliflower taste weird? ›

It can also taste bitter from a lack of moisture, uneven watering, waiting too long to harvest, or overcooking.

Which is better broccoli or cauliflower rice? ›

While they are both very nutritious vegetables, broccoli has a higher vitamin content, specifically in vitamin K and C, than cauliflower and is specifically known to be great for eye health. Broccoli florets also provide more minerals and fiber as well as contains vitamin A that isn't in cauliflower.

Is cauliflower rice actually healthy? ›

Cauliflower rice is a nutritious alternative to rice that's low in calories and carbs. It may even provide a number of benefits, such as boosting weight loss, fighting inflammation, and even protecting against certain illnesses. What's more, it's simple to make and can be eaten raw or cooked.

Why did cauliflower get so expensive? ›

Cauliflower prices are rising due to a lower yield, while demand remains consistent. Quality is fair with good weight and coloring.

Why does my cauliflower rice smell? ›

Cauliflower, like all cruciferous vegetables (cabbages, mustard, broccoli, etc.) contains sulfur compounds which will begin to smell when the vegetable is overcooked. Blanching, roasting or steaming just until the cauliflower is fork tender will keep it from smelling up your kitchen.

Can you overcook cauliflower rice? ›

Overcooking It

"When it is riced it's really easy for it to turn mushy from overcooking and then it won't hold up as well in your dishes where you're trying to use it to substitute rice," says Maggie Michalczyk, MS, RD.

How do you thicken riced cauliflower? ›

The key to a thicker consistency is to drain the steamed cauliflower really well before pureeing or blending it up. Put the puree back into the warm pan and add grated cheese. Stir until the cheese is melted and you should have a nice, thick texture. You can also add a keto thickener like glucomannan or xanthan gum.

Why is my cauliflower mushy? ›

First, take care not to overcrowd your pan; if the cauliflower is packed in rim-to-rim, the moisture will not be able to escape as the florets cook, which will result in soft steamed cauliflower instead of roasted. Next, don't be overly generous with the oil — a light coating is what we're after here.

Why did my rice turn out mushy? ›

Excess Water and Incorrect Water Ratio: Too much water during cooking often results in mushy rice. The water ratio is critical; too much water causes the rice grains to absorb more liquid than they can handle, leading to a breakdown in their structure.

Why is my rice mushy when I make it? ›

Mushy or soggy rice is simply overcooked rice that has absorbed too much water. Water over-absorption causes the rice grains to split open, ruining the texture and creating a starchy, gummy result.
